Recently deleted keeps deleted notes for 30 days. Open it in Settings > Data, choose a note, then choose Restore. If another note has its name, the restored note comes back under a free name.
To restore an older version, open the note's History, choose Restore beside the version you want, then confirm. That version becomes the note again; the text it replaces stays in History. If a version is not on this device yet, try again once it syncs.
